THUY’S STORY
FROM NACO ROAD
TO TOMBSTONE CANYON.
Thuy Dang came to Bisbee in 2011. In her telling, she came for love, not for cooking.
Her first shop was on Naco Road, where it stayed for about seven years. In 2020, Thuy's Noodle Shop moved to 207 Tombstone Canyon. The move brought the shop to its current home here in the canyon. The address changed; the idea behind the menu is a simple one: keep it short, with fewer dishes, done properly.
Every week, she drives to Tucson to shop for ingredients at Lee Lee International Supermarkets. The menu she brings to the table includes the dishes she is proudest of: chicken curry, vegan curry, and noodle salads with grilled pork or fried rolls.
Her own favourite is beef pho. It is the bowl she eats almost every day she works. Curry carries a different meaning: in Vietnam, she explains, it is food for big family parties, something usually eaten to celebrate.
Here on Tombstone Canyon, there is a small, colourful dining room with a lime-green counter and trim, murals and a wooden ceiling. Outside, the dog-friendly patio sits under tall trees. Takeout is available, too.
